Update Code in "dhs_functions.R>create_importance_plot to create updated appendix variable importance tables

Goal is to automate the Appendix Tables A2 - A5 such that I can create .tex tables with the most recent SHAP importance values in R that I can easily convert to word tables-

This approach is less error prone and considerably faster.
